Serves:
Ingredients
- 8 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh herbs (such as basil, parsley, or chives)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup diced vegetables (such as bell peppers, onions, or zucchini)
- 1/2 cup diced cooked ham or cooked bacon (optional)
Instructions
-
In a large bowl, whisk together the eggs, Parmesan cheese, fresh herbs, salt, and black pepper.
-
Heat the olive oil in a non-stick skillet over medium heat. Add the diced vegetables and cook until they are tender, about 5 minutes. If using ham or bacon, add it to the skillet and cook for an additional 2 minutes.
-
Pour the egg mixture over the vegetables in the skillet. Cook without stirring for 2-3 minutes, until the edges start to set.
-
Gently lift the edges of the frittata with a spatula to allow any uncooked eggs to flow underneath. Continue cooking for 5-7 minutes, until the bottom is golden brown and the top is almost set.
-
Place the skillet under the oven broiler for 2-3 minutes, until the top is fully set and lightly golden.
-
Carefully remove the skillet from the oven and let the frittata cool for a few minutes before slicing it into wedges. Serve hot or at room temperature.
