How To Make Quick Veg & Soft Cheese Frittata

Ingredients
- 6 eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 medium onion, thinly sliced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 cup spinach
- 4 oz soft cheese (such as goat cheese or feta), crumbled
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Heat the olive oil in a non-stick skillet over medium heat. Add the onion, bell pepper, and zucchini. Cook until vegetables are tender, about 5 minutes.

Stir in the spinach and cook until wilted, about 2 minutes.

Pour the egg mixture over the vegetables in the skillet. Sprinkle the crumbled soft cheese evenly over the top.

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is melted and golden.

Remove from the oven and let cool for a few minutes before slicing into wedges.
