Ingredients

  • 6 eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup spinach
  • 4 oz soft cheese (such as goat cheese or feta), crumbled

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, whisk together the eggs, milk, salt, and black pepper.

  3. Heat the olive oil in a non-stick skillet over medium heat. Add the onion, bell pepper, and zucchini. Cook until vegetables are tender, about 5 minutes.

  4. Stir in the spinach and cook until wilted, about 2 minutes.

  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle the crumbled soft cheese evenly over the top.

  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is melted and golden.

  7. Remove from the oven and let cool for a few minutes before slicing into wedges.

  8. Serve hot and enjoy!
