Ingredients
- 4 bone-in chicken thighs
- 1 small butternut squash, peeled and cut into cubes
- 1/2 cup walnuts, roughly chopped
- 8 fresh sage leaves
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat the oven to 425°F (220°C).

In a large oven-safe skillet, heat the olive oil over medium-high heat.

Season the chicken thighs with salt and pepper, then add them to the skillet skin-side down. Cook for 5 minutes, or until the skin is golden brown.

Flip the chicken thighs over and add the butternut squash cubes to the skillet around the chicken. Toss the squash with the olive oil in the skillet.

Sprinkle the walnuts and sage leaves over the chicken and squash.

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the squash is tender.
