  • 4 boneless skinless chicken breasts
  • 1/4 cup of fresh cilantro, chopped
  • 2 limes, juiced and zested
  • 3 cloves of garlic, minced
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Combine cilantro, lime juice and zest, garlic, olive oil, salt, and pepper in a bowl and mix well.

  3. Place chicken breasts in a baking dish and pour the cilantro lime mixture over the chicken.

  4. Bake for 20-25 minutes or until chicken is cooked through.

  5. Garnish with additional cilantro and lime wedges if desired.
