Ingredients

  • 4 chicken breasts
  • 1 butternut squash, peeled, seeded, and cut into chunks
  • 2 tablespoons of harissa paste
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, mix harissa paste, olive oil, cumin, coriander, salt, and pepper.

  3. Place chicken breasts and butternut squash chunks on a large baking tray.

  4. Spoon the harissa mixture over the chicken and squash, making sure everything is well coated.

  5. Bake in the preheated oven for 30-40 minutes, or until the chicken is cooked through and the squash is tender.

  6. Garnish with fresh cilantro before serving.
