How To Make Bacon Wrapped Pork Medallions

Enjoy a bite of these pork medallions wrapped in crispy bacon for dinner tonight! It’s made with just four ingredients, and takes only 30 minutes to make.

Ingredients

  • 1pork tenderloin,cut into 8 to 10 2-inch portions
  • 10bacon slices,thick cut
  • ½tspkosher salt
  • ¼tspground black pepper,coarse

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Cook the bacon strips until half-cooked.

  3. Wrap the medallions with a piece of bacon, then secure it with a toothpick.

  4. Heat a cast iron skillet to high heat, then add the medallions.

  5. Spoon over a bit of bacon fat onto each medallion.

  6. Bake in the oven for 15 to 20 minutes. Remove toothpicks.

  7. Serve warm, and enjoy!
