Ingredients
- 2 pounds of boneless lamb shoulder
- 2 onions, thinly sliced
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tablespoon of fresh thyme leaves
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of beef broth
Instructions

Heat olive oil in a large skillet over medium heat. Add the onions and cook until caramelized, about 15 minutes.

In a separate skillet, heat olive oil over medium-high heat. Season the lamb with salt and pepper, then brown on all sides, about 5 minutes.

Place the lamb, caramelized onions, garlic, thyme, and beef broth in a slow cooker. Cook on low heat for 6 hours, or until the lamb is tender and easily shreds with a fork.

Serve the slow-cooked lamb with onions and thyme over a bed of mashed potatoes or with crusty bread.
