How To Make Lemon Drizzle Traybake

- 200g unsalted butter, softened
- 200g caster sugar
- 3 large eggs
- 200g self-raising flour
- Zest of 2 lemons
- Juice of 1 lemon
- 100g icing sugar
Instructions

Preheat the oven to 180°C (350°F). Grease and line a baking tray with parchment paper.

In a large bowl, beat the butter and caster sugar until light and fluffy.

Add the eggs, one at a time, mixing well after each addition.

Fold in the flour and lemon zest until well combined.

Pour the batter into the prepared tray and smooth the top with a spatula.

Bake for 25-30 minutes, or until golden brown and a skewer inserted into the middle comes out clean.

Meanwhile, in a small bowl, mix the lemon juice and icing sugar until smooth.

While the traybake is still warm, prick the surface all over with a fork and pour the lemon drizzle evenly over the top.

Allow the traybake to cool completely before cutting into squares.
