Ingredients

  • 2 cups of leftover lamb, shredded
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 cloves of garlic, minced
  • 1 cup of beef broth
  • 2 tbsp of tomato paste
  • 1 tsp of dried thyme
  • 2 cups of mashed potatoes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350 F.

  2. In a large skillet, sauté onion, carrot, and garlic until tender.

  3. Add shredded lamb, beef broth, tomato paste, and thyme.

  4. Cook for about 10 minutes or until the sauce thickens.

  5. Season with salt and pepper to taste.

  6. Transfer the mixture into a baking dish.

  7. Top it with mashed potatoes.

  8. Bake for about 30 minutes or until the potatoes are golden brown.
