How To Make Vegetarian Crockpot Mushroom Stroganoff Recipe

A delicious and creamy mushroom stroganoff that is perfect for vegetarians!

Serves:

Ingredients

  • 16 oz of sliced mushrooms
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 1 1/2 cups of vegetable broth
  • 2 tbsp of tomato paste
  • 2 tbsp of Worcestershire sauce
  • 1 tsp of paprika
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 1 cup of sour cream
  • 12 oz of egg noodles
  • 2 tbsp of chopped parsley

Instructions

  1. In a crockpot, combine the mushrooms, onion, garlic, vegetable broth, tomato paste, Worcestershire sauce, paprika, salt and pepper.

  2. Cook on low for 4 hours.

  3. Stir in the sour cream and turn the crockpot to high.

  4. Let cook for an additional 5-10 minutes.

  5. Cook the egg noodles according to package instructions.

  6. Serve the stroganoff over the egg noodles, garnish with parsley.
