A delicious and creamy mushroom stroganoff that is perfect for vegetarians!

Ingredients
- 16 oz of sliced mushrooms
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 1 1/2 cups of vegetable broth
- 2 tbsp of tomato paste
- 2 tbsp of Worcestershire sauce
- 1 tsp of paprika
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 1 cup of sour cream
- 12 oz of egg noodles
- 2 tbsp of chopped parsley
Instructions

In a crockpot, combine the mushrooms, onion, garlic, vegetable broth, tomato paste, Worcestershire sauce, paprika, salt and pepper.

Cook on low for 4 hours.

Stir in the sour cream and turn the crockpot to high.

Let cook for an additional 5-10 minutes.

Cook the egg noodles according to package instructions.

Serve the stroganoff over the egg noodles, garnish with parsley.
