Ingredients
- 1 cup couscous, cooked
- 2 cups leftover lamb, shredded
- 1/2 red onion, sliced
- 1 bell pepper, diced
- 1 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions

In a large bowl, mix together cooked couscous, leftover lamb, red onion, bell pepper, cucumber, cherry tomatoes, mint and parsley.

In a small bowl, whisk together lemon juice and olive oil. Add salt and pepper to taste.

Pour dressing over the salad and toss to combine.
