Ingredients

  • 3 tbsp butter
  • 3 tbsp flour
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1 cup milk
  • 4 eggs, separated
  • 1 cup gruyere cheese, grated

Instructions

  1. Preheat oven to 375°F (190°C). Grease 4 individual souffle dishes.

  2. Melt butter in a saucepan over medium-low heat. Whisk in flour, black pepper, and salt.

  3. Gradually whisk in milk and cook, stirring constantly, until mixture thickens and comes to a boil.

  4. Remove from heat and whisk in egg yolks and gruyere cheese.

  5. In a separate bowl, beat egg whites until stiff peaks form.

  6. Gently fold egg whites into cheese mixture.

  7. Divide mixture into prepared dishes and bake for 25-30 minutes until puffed and golden brown.
