How To Make Classic Cheese Souffle

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 4 eggs, separated
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheese (such as Gruyere or Cheddar)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • Butter, for greasing the dishes

Instructions

  1. Preheat the oven to 375°F (190°C). Butter four individual souffle dishes.

  2. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.

  3. Gradually whisk in the milk, making sure there are no lumps. Cook the mixture until thickened, about 2-3 minutes.

  4. Remove the pan from the heat and whisk in the cheese, salt, black pepper, and cayenne pepper until the cheese is melted and the mixture is smooth.

  5. In a separate bowl, beat the egg yolks until pale and frothy. Gradually whisk the yolk mixture into the cheese mixture.

  6. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.

  7. Spoon the mixture into the prepared souffle dishes, filling them three-quarters full. Smooth the tops with a spatula.

  8. Place the dishes on a baking sheet and bake for 20-25 minutes, or until the souffles have risen and are golden brown on top.

  9. Serve immediately, as souffles deflate quickly.
