How To Make Classic Cheese Souffle

Ingredients
- 4 eggs, separated
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 cup shredded cheese (such as Gruyere or Cheddar)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- Butter, for greasing the dishes
Instructions

Preheat the oven to 375°F (190°C). Butter four individual souffle dishes.

In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.

Gradually whisk in the milk, making sure there are no lumps. Cook the mixture until thickened, about 2-3 minutes.

Remove the pan from the heat and whisk in the cheese, salt, black pepper, and cayenne pepper until the cheese is melted and the mixture is smooth.

In a separate bowl, beat the egg yolks until pale and frothy. Gradually whisk the yolk mixture into the cheese mixture.

In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.

Spoon the mixture into the prepared souffle dishes, filling them three-quarters full. Smooth the tops with a spatula.

Place the dishes on a baking sheet and bake for 20-25 minutes, or until the souffles have risen and are golden brown on top.

Serve immediately, as souffles deflate quickly.
