- 6 cups fresh spinach, chopped
- 4 eggs, separated
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg

Preheat the oven to 350°F (175°C).

In a large pot, bring water to a boil. Add the chopped spinach and blanch for 2 minutes. Drain and squeeze out any excess moisture.

In a separate bowl, beat the egg yolks with the Parmesan cheese, milk, flour, melted butter, salt, black pepper, and nutmeg until well combined.
