Ingredients

  • 6 cups fresh spinach, chopped
  • 4 eggs, separated
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large pot, bring water to a boil. Add the chopped spinach and blanch for 2 minutes. Drain and squeeze out any excess moisture.

  3. In a separate bowl, beat the egg yolks with the Parmesan cheese, milk, flour, melted butter, salt, black pepper, and nutmeg until well combined.

  4. In a clean bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the beaten egg whites into the spinach mixture until evenly incorporated.

  6. Pour the mixture into a greased souffle dish.

  7. Bake in the preheated oven for 25 minutes or until the souffle is puffed up and golden brown on top.

  8. Serve immediately and enjoy the light and flavorful spinach souffle.
