How To Make Cheese Soufflé

- 4 eggs
- 1 cup grated cheese (such as Gruyère or Cheddar)
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg
Instructions

Preheat oven to 375°F (190°C). Grease a soufflé dish or 4 ramekins with butter and sprinkle with grated cheese.

Separate egg whites and yolks into two separate bowls. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Remove from heat and stir in grated cheese, salt, black pepper, and nutmeg. Let cool slightly.

Beat egg whites until stiff peaks form. Gently fold egg whites into the cheese mixture until well combined. Pour mixture into prepared soufflé dish or divide equally among the ramekins.

Bake in preheated oven for 20 minutes, or until soufflé has risen and is golden brown on top. Serve immediately.
