Ingredients

  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, sauté for 2-3 minutes.

  3. Add butternut squash, ginger, cinnamon, salt, and pepper. Stir well.

  4. Add vegetable broth and bring to a boil.

  5. Reduce heat, cover and simmer for 20 minutes or until the butternut squash is very tender.

  6. Let the soup cool down before blending it in a blender until smooth.

  7. Return the blended soup into the pot, adding coconut milk and heat through.

  8. Season again with salt and pepper before serving.
