How To Make Vegetarian Butternut Squash Soup Recipe
A creamy and comforting soup with the sweetness of butternut squash.
Serves:
Ingredients
- 1 butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup coconut milk
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic, sauté for 2-3 minutes.

Add butternut squash, ginger, cinnamon, salt, and pepper. Stir well.

Add vegetable broth and bring to a boil.

Reduce heat, cover and simmer for 20 minutes or until the butternut squash is very tender.

Let the soup cool down before blending it in a blender until smooth.

Return the blended soup into the pot, adding coconut milk and heat through.

Season again with salt and pepper before serving.
