How To Make Vegetarian Lentil Soup Recipe

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 cup dry green lentils
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat and add onion, garlic, celery and carrots. Cook until vegetables are soft, about 5 minutes.

  2. Add lentils, vegetable broth, bay leaf and thyme to the pot and bring to a boil.

  3. Reduce heat and simmer for 30-35 minutes until lentils are tender.

  4. Season with salt and pepper to taste.

  5. Serve hot and garnish with fresh parsley.
