Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. In a large pot, sauté onion and garlic until softened.

  2. Add in the chopped bell pepper, cumin, and chili powder. Cook for another 2-3 minutes.

  3. Pour in the black beans and vegetable broth. Bring to a boil, then reduce heat to a simmer.

  4. Season with salt and pepper to taste. Simmer for 20-25 minutes until the vegetables are tender and flavors have melded.

  5. Using an immersion blender or transfer soup to a blender in batches, blend until smooth.

  6. Serve hot with your choice of toppings.
