Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 large tomatoes, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 4 cups vegetable broth
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pot over medium heat.

  2. Saute onion and garlic until translucent.

  3. Add the tomatoes, carrot, and celery. Cook until soft.

  4. Pour in the vegetable broth and add the basil, salt, and pepper.

  5. Bring to a boil, reduce heat, and simmer for 20 minutes.

  6. Puree the soup with an immersion blender until smooth.

  7. Serve hot with your favorite toppings.
