How To Make Vegetarian Mushroom Soup Recipe
A warm and hearty vegetarian soup filled with tender mushrooms and flavorful herbs.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz white mushrooms, sliced
- 8 oz cremini mushrooms, sliced
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup heavy cream
- Chives, chopped (for garnish)
Instructions

Heat olive oil in a large pot over medium heat.

Add chopped onion and garlic, and sauté until softened, about 5 minutes.

Add sliced mushrooms and cook until tender, about 8 minutes.

Pour in vegetable broth, dried thyme, salt, and black pepper. Bring to a simmer and cook for 10 minutes.

Use an immersion blender to puree the soup until smooth.

Stir in heavy cream and cook for another 2-3 minutes.

Serve hot, garnished with chopped chives.
