Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz white mushrooms, sliced
  • 8 oz cremini mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup heavy cream
  • Chives, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add chopped onion and garlic, and sauté until softened, about 5 minutes.

  3. Add sliced mushrooms and cook until tender, about 8 minutes.

  4. Pour in vegetable broth, dried thyme, salt, and black pepper. Bring to a simmer and cook for 10 minutes.

  5. Use an immersion blender to puree the soup until smooth.

  6. Stir in heavy cream and cook for another 2-3 minutes.

  7. Serve hot, garnished with chopped chives.
