  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups vegetable broth
  • 1 can diced tomatoes, drained
  • 1 can kidney beans, drained and rinsed
  • 1 cup small pasta
  • 2 cups spinach
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add onion and garlic, cook until softened.

  3. Add carrots and celery, cook for 5 minutes.

  4. Pour vegetable broth and diced tomatoes, bring to a simmer.

  5. Add kidney beans and pasta, cook until pasta is tender.

  6. Add spinach and cook for another 5 minutes.

  7. Season with salt and pepper.
