How To Make Vegetarian Chickpea Curry Recipe
A flavorful and hearty dish made with chickpeas, vegetables, and Indian spices.
Serves:
Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tbsp of olive oil
- 1 tbsp of curry powder
- 1 tsp of ground cumin
- 1/2 tsp of ground coriander
- 1/4 tsp of cayenne pepper
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large saucepan over medium heat. Add onions and garlic and cook until softened.

Add red and green bell peppers and cook for 2-3 minutes until slightly softened.

Add in curry powder, cumin, coriander, and cayenne pepper. Stir until fragrant.

Add chickpeas, diced tomatoes, vegetable broth, salt, and pepper. Stir until well combined.

Bring to a simmer and cook for 20-25 minutes or until the chickpeas are tender.

Serve hot with rice and garnish with fresh cilantro.
