How To Make Vegetarian Stuffed Peppers Recipe
Roasted bell peppers stuffed with a flavorful mix of veggies, rice and cheese.

Ingredients
- 4 large bell peppers, halved and seeds removed
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped spinach
- 1 small zucchini, diced
- 1/2 cup shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

In a large skillet, heat olive oil and sauté onion and garlic over medium heat until softened.

Add zucchini and spinach and cook until tender.

Add cooked rice, salt and pepper to taste.

Stuff the pepper halves with the rice mixture.

Top each pepper with shredded cheese.

Bake for 35-40 minutes until the peppers are tender and the cheese is melted and bubbly.
