A colorful and delicious stir-fry made with quinoa, vegetables, and Asian flavors.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas
  • 1 cup broccoli florets
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper, to taste
  • Optional: chopped cilantro for garnish

Instructions

  1. Rinse quinoa in a fine-mesh strainer and add to a pot with vegetable broth. Bring to a boil, then reduce heat to low, cover, and let simmer for 15-20 minutes or until all the liquid has been absorbed.

  2. While the quinoa cooks, heat olive oil in a pan over medium-high heat. Add onion and garlic and sauté for 2-3 minutes or until softened.

  3. Add bell peppers, snow peas, and broccoli and continue to stir-fry for another 5-7 minutes or until tender-crisp.

  4. Add cooked quinoa, soy sauce, sesame oil, salt, and pepper to the pan and stir to combine. Cook for an additional 2-3 minutes or until heated through.

  5. Serve hot, garnished with cilantro if desired.
