How To Make Vegetarian Quinoa Stir-Fry
A colorful and delicious stir-fry made with quinoa, vegetables, and Asian flavors.

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1 cup broccoli florets
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper, to taste
- Optional: chopped cilantro for garnish
Instructions

Rinse quinoa in a fine-mesh strainer and add to a pot with vegetable broth. Bring to a boil, then reduce heat to low, cover, and let simmer for 15-20 minutes or until all the liquid has been absorbed.

While the quinoa cooks, heat olive oil in a pan over medium-high heat. Add onion and garlic and sauté for 2-3 minutes or until softened.

Add bell peppers, snow peas, and broccoli and continue to stir-fry for another 5-7 minutes or until tender-crisp.

Add cooked quinoa, soy sauce, sesame oil, salt, and pepper to the pan and stir to combine. Cook for an additional 2-3 minutes or until heated through.

Serve hot, garnished with cilantro if desired.
