Ingredients

  • 1 large eggplant, diced
  • 2 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 can diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add diced eggplant, zucchini, red bell pepper, onion, and garlic to the skillet and cook for 5-7 minutes until slightly softened.

  3. Add canned tomatoes (with juice), dried basil, dried oregano, salt, and pepper to the skillet. Stir and bring to a boil.

  4. Reduce heat to low, cover and let simmer for 20-25 minutes until vegetables are soft and tender, stirring occasionally.

  5. Serve hot with crusty bread or rice.
