How To Make Vegetarian Ratatouille Recipe
A hearty and healthy dish with vegetables cooked to perfection in a flavorful tomato sauce.
Serves:
Ingredients
- 1 large eggplant, diced
- 2 medium zucchini, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 can diced tomatoes
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions

Heat olive oil in a large skillet over medium heat.

Add diced eggplant, zucchini, red bell pepper, onion, and garlic to the skillet and cook for 5-7 minutes until slightly softened.

Add canned tomatoes (with juice), dried basil, dried oregano, salt, and pepper to the skillet. Stir and bring to a boil.

Reduce heat to low, cover and let simmer for 20-25 minutes until vegetables are soft and tender, stirring occasionally.

Serve hot with crusty bread or rice.
