Ingredients

  • 1.5 cups arborio rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • ½ cup white wine
  • 1 cup frozen peas
  • 1 cup chopped mushrooms
  • 1 cup freshly grated parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp butter
  • Fresh parsley for garnish

Instructions

  1. Combine the onion, garlic, rice, broth, white wine, mushrooms, and peas in the crockpot.

  2. Cook on high for 3-4 hours or until the rice is tender and the liquid has been absorbed.

  3. Once cooked, add parmesan cheese, butter, salt, and pepper and stir until well incorporated.

  4. Serve hot and garnish with fresh parsley.
