Ingredients
- 1 cup dry quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 1 jalapeno pepper, minced
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 2 cups vegetable broth
Instructions

Rinse quinoa under cold water and drain.

In a crockpot, add quinoa, black beans, bell pepper, onion, jalapeno pepper, cumin, smoked paprika, garlic powder, salt, and vegetable broth. Stir to combine.
