Ingredients

  • 1 cup dry quinoa
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 1 jalapeno pepper, minced
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups vegetable broth

Instructions

  1. Rinse quinoa under cold water and drain.

  2. In a crockpot, add quinoa, black beans, bell pepper, onion, jalapeno pepper, cumin, smoked paprika, garlic powder, salt, and vegetable broth. Stir to combine.

  3. Cook on high for 3 hours or until quinoa is tender.

  4. Serve and enjoy!
