Ingredients
- 8 slices of bread
- 2 cups of baby spinach
- 1 small squash, thinly sliced
- 4 tbsp of tamarind paste
- 2 cups of shredded cheese (cheddar or mozzarella)
- Butter or oil for grilling
Instructions

Preheat a griddle or frying pan over medium heat.

Spread tamarind paste evenly on one side of each slice of bread.

Layer spinach, squash, and shredded cheese on 4 slices of bread.

Top with the remaining 4 slices of bread, tamarind side down.

Lightly butter or oil the griddle or pan.

Place the sandwiches on the griddle and cook for about 3-4 minutes on each side, until golden brown and cheese is melted.
