  • 8 slices of bread
  • 2 cups of baby spinach
  • 1 small squash, thinly sliced
  • 4 tbsp of tamarind paste
  • 2 cups of shredded cheese (cheddar or mozzarella)
  • Butter or oil for grilling

Instructions

  1. Preheat a griddle or frying pan over medium heat.

  2. Spread tamarind paste evenly on one side of each slice of bread.

  3. Layer spinach, squash, and shredded cheese on 4 slices of bread.

  4. Top with the remaining 4 slices of bread, tamarind side down.

  5. Lightly butter or oil the griddle or pan.

  6. Place the sandwiches on the griddle and cook for about 3-4 minutes on each side, until golden brown and cheese is melted.

  7. Remove from heat and let cool for a minute before serving.
