Ingredients

  • 250g chicken livers
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 50g unsalted butter
  • 2 tbsp brandy
  • 50g sultanas
  • 50g raisins
  • Salt and pepper, to taste

Instructions

  1. In a pan, melt the butter and sauté the onion and garlic until translucent.

  2. Add the chicken livers and cook until they are no longer pink in the center.

  3. Remove from heat and allow the mixture to cool slightly.

  4. In a food processor, blend the chicken livers, onion, garlic, and brandy until smooth.

  5. Stir in the sultanas and raisins. Season with salt and pepper.

  6. Divide the mixture into serving jars or ramekins and refrigerate for at least 2 hours to set.

  7. Serve chilled with toasted bread or crackers.
