Serves:

Ingredients

  • 1 cup sweetcorn kernels
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 green onions, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup milk
  • 1 egg
  • 1 avocado, sliced
  • 100g crispy chorizo, crumbled

Instructions

  1. In a large mixing bowl, combine the sweetcorn kernels, flour, baking powder, salt, green onions, cilantro, milk, and egg. Mix until well combined.

  2. Heat oil in a large skillet over medium heat. Spoon the sweetcorn mixture into the skillet to form fritters. Cook for 3-4 minutes on each side until golden brown and cooked through.

  3. Remove the fritters from the skillet and drain on a paper towel.

  4. To serve, top each fritter with slices of avocado and crispy chorizo.

  5. Enjoy!
