Ingredients

  • 200g prawns, peeled and deveined
  • 1 cup sweetcorn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 green onions, chopped
  • 1/4 cup milk
  • 1 egg, beaten
  • Oil for frying

Instructions

  1. In a bowl, mix together the flour, cornmeal, baking powder, salt, black pepper, and paprika.

  2. Add the prawns, sweetcorn, and green onions to the dry mixture and toss to coat evenly.

  3. In a separate bowl, whisk together the milk and egg.

  4. Pour the wet mixture over the prawn and sweetcorn mixture, and stir until well combined.

  5. Heat oil in a frying pan over medium heat.

  6. Drop spoonfuls of the fritter mixture into the hot oil and flatten slightly with the back of a spoon.

  7. Fry until golden brown on both sides, about 3-4 minutes per side.

  8. Remove from the pan and drain on a paper towel.

  9. Serve hot with a dipping sauce of your choice.
