How To Make Tuna, Spring Onion & Sweetcorn Fritters with Sour Cream
These crispy fritters are filled with tuna, spring onion, and sweetcorn, and served with tangy sour cream.

Ingredients
- 2 cans of tuna, drained
- 4 spring onions, finely chopped
- 1 cup of sweetcorn kernels
- 1 cup of all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup of milk
- Vegetable oil, for frying
- Sour cream, for serving
Instructions

In a large bowl, mix together the tuna, spring onions, sweetcorn, flour, baking powder, salt, and black pepper.

Add in the beaten eggs and milk, and stir until well combined.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the tuna mixture into the hot oil and flatten with the back of the spoon.

Cook for 2-3 minutes on each side, until golden brown and crispy.

Remove from the pan and drain on paper towels.

Serve the fritters hot, with a dollop of sour cream on top.
