How To Make Sweetcorn Fritters with Eggs & Black Bean Salsa

Ingredients
- 2 cups sweetcorn kernels
- 1/2 cup all-purpose flour
- 1/4 cup milk
- 2 eggs, beaten
- 1/2 tsp baking powder
- 1/4 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1 small red onion, finely chopped
- 1 small red bell pepper, finely chopped
- 1 cup black beans, rinsed and drained
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions

In a large bowl, combine the sweetcorn kernels, flour, milk, beaten eggs, baking powder, paprika, salt, and black pepper. Mix well until everything is evenly combined.

Heat the vegetable oil in a large skillet over medium heat. Spoon about 1/4 cup of the sweetcorn mixture onto the skillet, flattening it slightly with the back of the spoon. Cook for 3-4 minutes on each side, or until golden brown. Remove from the skillet and set aside. Repeat with the remaining mixture.

In the same skillet, add the chopped onion and red bell pepper. Cook for 2-3 minutes, until softened. Add the black beans and cook for another 2 minutes, until heated through.

Serve the sweetcorn fritters with scrambled eggs and the black bean salsa. Garnish with fresh cilantro and serve with lime wedges.
