How To Make Sweetcorn Fritters
Delicious fritters made with sweetcorn, perfect as an appetizer or snack.
Serves:
Ingredients
- 2 cups sweetcorn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 2 green onions, chopped
- 1/4 cup grated cheddar cheese
- 1/4 cup finely chopped red bell pepper
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1/4 cup milk
- Vegetable oil for frying
Instructions

In a large bowl, combine sweetcorn, flour, cornmeal, green onions, cheddar cheese, red bell pepper, baking powder, salt, and black pepper. Mix well.

In a separate bowl, whisk together eggs and milk. Pour the egg mixture into the sweetcorn mixture and stir until fully combined.

Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the sweetcorn mixture into the hot oil and flatten slightly with the back of the spoon.

Cook the fritters for 2-3 minutes on each side, or until golden brown. Transfer to a paper towel-lined plate to remove excess oil.

Serve the sweetcorn fritters hot with your favorite dipping sauce or as a side dish.
