How To Make Sweetcorn Fritters

Ingredients

  • 2 cups sweetcorn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 green onions, chopped
  • 1/4 cup grated cheddar cheese
  • 1/4 cup finely chopped red bell pepper
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 1/4 cup milk
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine sweetcorn, flour, cornmeal, green onions, cheddar cheese, red bell pepper, baking powder, salt, and black pepper. Mix well.

  2. In a separate bowl, whisk together eggs and milk. Pour the egg mixture into the sweetcorn mixture and stir until fully combined.

  3. Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the sweetcorn mixture into the hot oil and flatten slightly with the back of the spoon.

  4. Cook the fritters for 2-3 minutes on each side, or until golden brown. Transfer to a paper towel-lined plate to remove excess oil.

  5. Serve the sweetcorn fritters hot with your favorite dipping sauce or as a side dish.
