How To Make Smoked Haddock & Chorizo Salad

Ingredients

  • 200g smoked haddock fillets
  • 100g chorizo, sliced
  • 200g mixed salad leaves
  • 1 red onion, thinly sliced
  • 1 avocado, sliced
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or barbecue to medium-high heat.

  2. Grill the haddock fillets for 5-6 minutes on each side until cooked through.

  3. In a frying pan, cook the chorizo slices until crispy. Remove from the pan and set aside.

  4. In a large bowl, combine the salad leaves, red onion, and avocado slices.

  5. Drizzle the lemon juice and olive oil over the salad and season with salt and pepper.

  6. Flake the grilled haddock fillets and add them to the salad.

  7. Sprinkle the crispy chorizo over the top.

  8. Gently toss the salad to combine all the ingredients.

  9. Serve immediately and enjoy!
