How To Make Spicy Black Bean Tacos

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup vegetable broth
- salt and pepper to taste
- 8 small flour tortillas
- optional toppings: avocado, salsa, cilantro
Instructions

Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and jalapeno pepper, and cook until they become translucent.

Stir in the chili powder and cumin, and cook for another minute.

Add the black beans and vegetable broth to the skillet. Bring to a simmer and cook for 10 minutes, or until the beans have heated through and the flavors have melded together. Season with salt and pepper to taste.

While the beans are cooking, warm the flour tortillas in a dry skillet or microwave.

To serve, spoon the black bean mixture onto each tortilla, and top with any desired toppings. Fold in half and enjoy!
