How To Make Saucy Bean Baked Eggs

Ingredients

  • 8 large eggs
  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 can (14.5 oz) of diced tomatoes
  • 1 cup of tomato sauce
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with cooking spray.

  2. In a large skillet, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until they are softened and fragrant.

  3. Add the black beans, diced tomatoes, tomato sauce, cumin, chili powder, paprika, salt, and pepper to the skillet. Stir well to combine the ingredients and allow the mixture to simmer for about 5 minutes.

  4. Transfer the bean mixture to the greased baking dish and create 8 small wells in the mixture.

  5. Crack an egg into each well, being careful not to break the yolk.

  6. Bake in the preheated oven for about 20 minutes, or until the egg whites are fully set but the yolks are still slightly runny.

  7. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro.

  8. Serve the saucy bean baked eggs hot with toast or crusty bread.
