You might have already seen the trendy bowls of quinoa seeds with fruits and nuts around social media. But did you know that you can have savory renditions of this morning meal, too? Serves:

Ingredients

  • 2 cups of canned beans
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste
  • 4 eggs
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until onions are translucent and peppers are tender.

  3. Add the smoked paprika and cumin, stirring to coat the vegetables.

  4. Add the canned beans along with their liquid. Season with salt and pepper. Simmer for 10 minutes.

  5. Remove from heat and transfer the bean mixture to a baking dish.

  6. Create 4 wells in the bean mixture and crack an egg into each well.

  7. Bake in the preheated oven for 15-20 minutes, or until the eggs are cooked to your desired doneness.

  8. Garnish with fresh cilantro and serve hot.
