How To Make Sumac Turkey-Stuffed Pittas

We have turkey sandwiched between lovely bread, baked as pie filling, and cooked in a casserole. Whatever way it’s served, turkey meat is a versatile dish you just can’t get enough of.

Ingredients

  • 4 large pittas
  • 400g ground turkey
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ground sumac
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 cup diced tomatoes
  • 1/2 cup chopped fresh parsley
  • 1/4 cup lemon juice
  • 1/4 cup Greek yogurt

Instructions

  1. Preheat the oven to 180°C (350°F). Slice open the pittas and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

  3. Add the ground turkey to the skillet and cook until browned, about 5-7 minutes.

  4. Stir in the ground sumac, cumin, coriander, paprika, salt, and pepper. Cook for another 2-3 minutes.

  5. Add the diced tomatoes and cook for an additional 5 minutes, stirring occasionally.

  6. Remove from heat and stir in the fresh parsley and lemon juice.

  7. Spoon the turkey mixture into the pittas and place them on a baking sheet. Bake for 10 minutes until heated through.

  8. Serve the stuffed pittas with a dollop of Greek yogurt and a side salad.
