How To Make Satay Tofu Skewers with Garlic & Ginger Pak Choi

Ingredients
- 1 package of firm tofu, drained and cut into cubes
- 2 tablespoons of soy sauce
- 1 tablespoon of peanut butter
- 1 tablespoon of honey or agave syrup
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 tablespoon of vegetable oil
- 4 baby pak choi, halved
- 1 tablespoon of sesame oil
- 1 tablespoon of sesame seeds, for garnish
- Salt and pepper to taste
Instructions

In a bowl, combine soy sauce, peanut butter, honey or agave syrup, minced garlic, and grated ginger. Mix well to make the satay marinade.

Add tofu cubes to the marinade and toss to coat. Allow tofu to marinate for at least 10 minutes.

Preheat a grill or grill pan over medium heat. Thread tofu cubes onto skewers and grill for about 6-8 minutes, turning occasionally, until tofu is heated through and slightly charred.

While the tofu is grilling, heat vegetable oil in a large pan over medium heat. Add the halved pak choi and stir-fry for about 5 minutes until wilted.

Drizzle sesame oil over the pak choi and season with salt and pepper to taste.

Serve the grilled tofu skewers on a bed of garlic and ginger pak choi. Garnish with sesame seeds.
