Ingredients
- 2 large aubergines, sliced lengthwise
- 3 tablespoons of vegetable oil
- 2 tablespoons of soy sauce
- 2 tablespoons of peanut butter
- 2 tablespoons of honey
- 1 tablespoon of lime juice
- 1 teaspoon of minced garlic
- 1 teaspoon of minced ginger
- ½ teaspoon of chili flakes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Preheat your grill or grill pan on medium heat.

In a bowl, mix together the soy sauce, peanut butter, honey, lime juice, minced garlic, minced ginger, chili flakes, salt, and pepper.

Brush the aubergine slices with vegetable oil on both sides.

Grill the aubergine slices for about 3-4 minutes on each side, until grill marks appear and they are tender.

Remove the grilled aubergines from the grill and brush both sides with the satay sauce.

Place the aubergine slices back on the grill for another 1-2 minutes on each side, until the sauce caramelizes slightly.

Remove from the grill and garnish with fresh cilantro.
