How To Make Pea & Leek Super-Green Tart

Ingredients
- 1 sheet of puff pastry
- 1 cup of fresh or frozen peas
- 2 leeks, thinly sliced
- 1 garlic clove, minced
- 1 cup of spinach
- 1/4 cup of grated Parmesan cheese
- 3 eggs
- 1/2 cup of milk
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Roll out the puff pastry and press it into a tart pan.

In a large skillet, sauté the leeks and garlic until softened.

Add the peas and spinach to the skillet and cook for another 2 minutes.

In a bowl, whisk together the eggs, milk, Parmesan cheese, salt, and pepper.

Pour the egg mixture over the vegetables in the skillet and stir well.

Pour the mixture into the tart pan with the puff pastry.

Bake in the preheated oven for 30-35 minutes, or until the filling is set and the pastry is golden brown.
