How To Make Pea & Leek Open Lasagne

Ingredients

  • 250g lasagne sheets
  • 2 leeks, sliced
  • 1 cup fresh peas
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Cook the lasagne sheets according to package instructions. Drain and set aside.

  3. In a large pan, melt the butter over medium heat. Add the leeks and cook until softened.

  4. Add the fresh peas and cook for another 2 minutes.

  5. Stir in the flour and cook for 1 minute.

  6. Gradually whisk in the milk, making sure there are no lumps.

  7. Cook for 5-7 minutes until the sauce thickens.

  8. Stir in the grated Parmesan cheese and season with salt and pepper.

  9. Place a layer of lasagne sheets on a baking dish. Top with a layer of the creamy leek and pea sauce.

  10. Repeat the layers, finishing with a layer of the sauce on top.

  11. Bake in the preheated oven for 20-25 minutes until golden and bubbly.

  12. Serve hot and enjoy!
