Ingredients

  • 1 cup cooked chicken, shredded
  • 1/4 cup onion, diced
  • 1/4 cup carrots, diced
  • 1/4 cup frozen peas
  • 1/4 cup chicken broth
  • 1/4 cup milk
  • 2 tbsp all-purpose flour
  • 2 tbsp butter, melted
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • 1 package pre-made pie crusts

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a skillet, sauté the onions and carrots in butter until they become tender.

  3. Add the shredded chicken, peas, chicken broth, milk, flour, salt, pepper, and thyme to the skillet. Stir well to combine.

  4. Cook the mixture over medium heat until it thickens, about 5 minutes. Remove from heat and let it cool slightly.

  5. Roll out the pre-made pie crusts and cut circles slightly larger than your mini pie tins.

  6. Press the crusts into the pie tins and fill each with the chicken mixture.

  7. Top each pie with another circle of pie crust and seal the edges with a fork.

  8. Cut slits in the top crust to allow steam to escape.

  9. Place the mini pies on a baking sheet and bake for 15-20 minutes, or until the crust is golden brown.

  10. Allow the pies to cool for a few minutes before serving.
