How To Make Heritage Carrots with Hazelnut Granola

Ingredients
- 1 bunch of heritage carrots, tops trimmed and peeled
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup rolled oats
- 1/4 cup chopped hazelnuts
- 2 tbsp honey
- 1/4 tsp ground cinnamon
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the carrots with olive oil, salt, and black pepper.

Arrange the carrots on a baking sheet and roast for 20-25 minutes, or until tender and lightly caramelized.

Meanwhile, in a separate bowl, combine rolled oats, chopped hazelnuts, honey, and ground cinnamon. Stir until well combined.

Spread the granola mixture in a thin layer onto a parchment-lined baking sheet.

Bake the granola for 8-10 minutes, or until golden brown and crispy.

Remove the carrots from the oven and let cool slightly.
