Ingredients

  • 1 bunch of heritage carrots, tops trimmed and peeled
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup rolled oats
  • 1/4 cup chopped hazelnuts
  • 2 tbsp honey
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the carrots with olive oil, salt, and black pepper.

  3. Arrange the carrots on a baking sheet and roast for 20-25 minutes, or until tender and lightly caramelized.

  4. Meanwhile, in a separate bowl, combine rolled oats, chopped hazelnuts, honey, and ground cinnamon. Stir until well combined.

  5. Spread the granola mixture in a thin layer onto a parchment-lined baking sheet.

  6. Bake the granola for 8-10 minutes, or until golden brown and crispy.

  7. Remove the carrots from the oven and let cool slightly.

  8. Serve the roasted carrots with a sprinkle of hazelnut granola on top. Enjoy!
