Ingredients

  • 1 cup cooked chestnuts, peeled
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 parsnips, peeled and diced
  • 3 cups chicken or vegetable broth
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside on a paper towel-lined plate.

  2. In the same pot, add the diced onion and parsnips. Cook until the vegetables are tender, about 5 minutes.

  3. Add the cooked chestnuts and broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  5. Return the soup to the pot and stir in the milk. Simmer for an additional 5 minutes.

  6. Season with salt and pepper to taste.

  7. Serve the soup hot, garnished with crispy bacon and chopped fresh parsley.
