Ingredients

  • 4 cups mixed salad greens
  • 1 cup fresh herbs (such as basil, mint, and cilantro), roughly chopped
  • 1 red chilli, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup toasted pine nuts
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. In a large salad bowl, combine the mixed salad greens, fresh herbs, red chilli, cherry tomatoes, red onion, and toasted pine nuts.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
