How To Make Aubergine & Goat’s Cheese Salad with Mint-Chilli Dressing

Ingredients
- 2 large aubergines, sliced into rounds
- 200g goat’s cheese, crumbled
- 1 red chilli, finely chopped
- 1 bunch of fresh mint leaves
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions

Preheat a grill or barbecue to medium-high heat. Brush the aubergine slices with olive oil and season with salt and pepper.

Grill the aubergine slices for 4-5 minutes on each side until nicely charred and tender. Remove from heat and set aside to cool.

In a small bowl, combine the chopped chilli, mint leaves, olive oil, lemon juice, salt, and pepper to make the dressing.

Arrange the grilled aubergine slices on a serving platter. Sprinkle with crumbled goat’s cheese and drizzle with the mint-chilli dressing.

Garnish with additional mint leaves, if desired. Serve immediately.
