How To Make Courgette, Mint, Ricotta & Chilli Salad

Ingredients
- 2 courgettes
- 150g ricotta cheese
- 1 red chilli
- 2 tbsp chopped fresh mint leaves
- Juice of 1 lemon
- 2 tbsp extra-virgin olive oil
- Salt and pepper, to taste
Instructions

Using a vegetable peeler, thinly slice the courgettes lengthwise into ribbons.

In a large bowl, combine the courgette ribbons, ricotta cheese, chopped chilli, and mint leaves.

Drizzle the lemon juice and olive oil over the salad and season with salt and pepper.

Toss everything together until well combined.
