How To Make Miso Mushroom & Halloumi Burgers

Ingredients

  • 4 portobello mushrooms, stems removed
  • 1 red onion, sliced
  • 1 tbsp miso paste
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 4 slices of halloumi cheese
  • 4 burger buns
  • 4 lettuce leaves
  • 4 tomato slices
  • 4 tbsp mayonnaise

Instructions

  1. Preheat the grill or barbecue to medium-high heat.

  2. In a small bowl, mix together the miso paste, soy sauce, and olive oil.

  3. Brush the mushroom caps and halloumi slices with the miso mixture.

  4. Grill the mushrooms and halloumi for 3-4 minutes on each side, until tender and slightly charred.

  5. Toast the burger buns on the grill for a minute or until lightly browned.

  6. Assemble the burgers by placing a grilled mushroom cap on the bottom half of each bun.

  7. Top with a slice of halloumi, red onion, lettuce, tomato, and a tablespoon of mayonnaise.

  8. Serve the miso mushroom & halloumi burgers immediately.
